Homemade Energizing Breakfast Muesli Recipe

Breakfast shouldn’t be a complicated chore. And no, coffee is not breakfast! What if you had a recipe that you could make ahead at night and then have it ready to enjoy in the morning for a few days? Wouldn’t that make your life SO much easier in the morning? YES! This recipe was one of the first recipes that I ever shared with my clients and it’s about time that I posted it on my blog because it’s loved by all, nutritionist-approved and will keep you satisfied and bloat-free.

There is a very unique ingredient in this recipe that makes it so joyous – kefir. What exactly is kefir?

Kefir is a fermented dairy product made by adding bacterial cultures to milk which cause the transformation of the milk’s sugar into lactic acid. Note: You can also get coconut kefir if you are a vegan. Kefir’s taste is unmistakable. It has an effervescent nature that has been labeled as the “champagne effect”. It’s tart and the texture is thinner than yogurt.

Kefir is fast becoming known as a “superfood” because it is bursting with good bacteria that may fortify your immune system. Kefir can now be found not only at farmer’s markets and health food stores, but your local grocery store, too. Most grocery stores will carry kefir in their health food section. It comes flavoured as well, but I typically avoid those brands because flavouring often equate to 16g of sugar or more.  If you want the taste of vanilla, you can easily add vanilla yourself.

The key to this recipe is making it at night because it is highly beneficial for the nuts and seeds to soak for at least eight hours to increase the digestibility. Nuts contain enzyme inhibitors and soaking 8-12 hours releases these inhibitors. Be sure that you only soak the amount you require because soaked nuts and seeds tend to grow mold fairly quickly.

Homemade Muesli Recipe

2 cups of raw organic oats
½ cup pumpkin seeds*
½ cup sunflower seeds*
½ cup almonds*
½ cup raisins and/or cranberries**
3 cups of pure filtered water
2 tbsp kefir
1 freshly squeezed lemon

*Make sure you buy unroasted and unsalted nuts and seeds.

**Be sure to use unsulfured dried fruit.

Directions
Combine all the dry ingredients into a large glass bowl and mix together. Add enough water to entirely cover the ingredients. Stir in kefir and lemon juice. Leave out on the counter overnight with a loosely fitting lid. Make sure to put it in the in fridge the next day to ensure freshness. Do not keep more than 2-3 days.

How to Enjoy!
Spoon out desired amount of muesli into bowl. Add desired amount of organic yogurt, a dash of cinnamon (very blood sugar balancing), 1 tbsp of organic maple syrup, 2 tbsp of chia seeds or 1 tbsp flax oil, fresh fruit and enjoy!!

    I say this recipe (save for wet ingreds) would serve to make the perfect “breakfast in a jar” gift for Xmas (with some decorative ribbon!) Ooooooo that might be a cool entry to do, healthy homemade holiday gifts!
