Liver Loving Juice with Beets

The average person in the western world starts their day with a jolt of caffeine via a shot of espresso, coffee, latte or cappuccino. While this may be fine on occasion (in the past, I used to drink a little too much espresso, which left me anxious, moody and imbalanced) if you need caffeine to wake you up, then you might want to consider drinking or eating something that will give you lasting, sustainable energy – a juice.

Yesterday morning I juiced some root vegetables with ginger. Ginger is one of my favourite juice additions because it adds a zippy zing.

Beets are the main reason this recipe is liver-loving because they are a wonderful source of betaine, which stimulates the function of liver cells and protects the liver and bile ducts. Additionally, recent studies have concluded the betaine lowers the risk of coronary and cerebral artery diseases and this may be due to the fact that betaine lowers inflammation in the body.

According to the Encyclopedia of Healing Juices, beets are a blood-building herb that also detoxifies the blood and renews it with minerals and natural sugars. The addition of parsnips, carrots and ginger, make this one delicious juice.

1 large beet
2-3 medium carrots
2 parsnips
Thumb size of fresh ginger

Place ingredients one-by-one into your juicer and voila – a beautiful liver-loving juice for one. EnJOY!
