Eggy Mash: Quick Breakfast

A few weeks ago, while in a nutrition consultation with a client, we discussed our love of a scrambled egg dish with tons of veggies that we like to call a scramelet. While a scramelet won’t win any awards for presentation, it gets a gold medal for taste.

A scramelet is a great dinner after a long day at work when you only have a few ingredients on hand and want something that will satisfy your hunger and balance your blood sugar for a restful sleep.

Eggs are a low-cost, high quality source of complete protein and protein is an essential macronutrient for growing kids and a building block for every cell of your body. Eggs are also a source of good fat.

Eggs are top of the list when it comes to brain healthy foods because of a nutrient called choline. This vital brain nutrient is a key component of acetylcholine — a brain chemical essential for sending messages and speaking to the rest of your body, ie. your muscles. As well, your brain is actually made of 60 percent fat, which is yet another reason that choline is critical because it is a part of a fat-like molecule in your brain called phosphatidylcholine. Some people buy supplements for brain health and it can cost up to $40, which is pretty expensive when it comes for free in an egg!

This simple recipe can be whipped up in under 15 minutes.

Scramelet Ingredients
6-7 eggs
1 cup of almond milk
1/2 onion (any kind) finely chopped
1/2 cup of broccoli florets
2 stalks of celery
1 tbsp organic coconut oil or ghee
Sea salt and pepper to taste

Method
In a bowl, whisk together the almond milk and eggs. Saute the onions and celery in coconut oil until they are tender. Pour the egg mixture and broccoli into the slightly cooked onions and celery. Cook on medium heat for approximately 5-6 minutes, stirring the eggs as you would cook scrambled eggs. Serves 4.

I like to have my scramelet with a tablespoon or two of fresh homemade salsa.
