Grilled Banana Sandwich with Cinnamon & Maple Syrup

This grilled sandwich is the breakfast of champions due to its protein complex carbs, good fats, vitamins and minerals. It will keep your belly satisfied until lunch and your brain fueled with lasting energy. It’s a no-brainer with kids because they love the natural sweetness from the cinnamon, banana and maple syrup.

The bread I chose for this recipe is one I have written about before — it’s sprouted whole wheat bread by a company called Silver Hills. Their process is unique, but essentially what they do is instead of grinding organic grain into flour, they sprout it, then mash it into a dough that forms the base of the bread.

Sprouting grains makes them more digestible, higher in protein, almost triples the fibre and increases the B vitamins. Further, this is truly as whole as bread gets because the bran, germ and endosperm remain intact, unlike most commercially prepared breads.

I used sunflower seed butter for this recipe because most people are stuck in a peanut butter rut and many are still eating hydrogenated, processed peanut butter with almost as much sugar as a chocolate bar. Almond butter is another great option and sweeter than sunflower seed butter. Both are a source of protein, good fat, vitamin E and minerals.

This breakfast sandwich is truly satisfying and keep your belly from growling for a few hours. This means you will avoid mindless snacking when you eat this type of meal for breakfast.

Ingredients:

2 pieces of sprouted whole wheat bread
2 tbsp all natural sunflower seed butter or almond butter
1 banana sliced
1 tsp ground cinnamon
Drizzle of real maple syrup

Spread the sunflower seed butter on one slice. Decorate with the sliced banana, sprinkle with cinnamon and drizzle with maple syrup. Place the other slice of bread on top like a sandwich. Heat your grill to medium and place sandwich on top. If you have a panini press, then you know what to do! Cook for about 3-4 minutes each side if you are using a grille on the stove top. Once heated, enjoy immediately.

This sweet breakfast sandwich goes very nicely with a bowl of seasonal fruit.

Note: If you wanted a gluten-free option, then I suggest a brown rice bread from the health food store.
