
When I was in Italy last summer, I fell in love with the cool refreshing taste of gelato on a hot day. I have always been a fan of ice cream, but the Italians sure do know how to do it best! This is my healthy version of Lemon Gelato.
This dessert is light and refreshing with a tangy lemon zip! And, it’s super duper easy to make. Even better ![]()
2 cups of water
2 cups of young coconut flesh
Also known as “thai coconut” it can be found in Asian markets and health food stores. Look for coconut pre-cut into a white cylinder with a pointed top. These coconuts are young so their flesh is soft and creamy.
1-1/2 cups of freshly squeezed lemon juice
1-1/2 cups of light agave syrup
1 tbsp of lemon zest
Blend all ingredients together until smooth. Freeze in a shallow pan and stir occasionally until ready to serve. If you have an ice cream maker, even better!
